Kirby’s Favorite Dish: Inez Marmon’s German Chocolate Cake
Ingredients
For the Chocolate Cake:
- 2 cups sugar
- 1 ¾ cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup oil (canola or vegetable)
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Coconut Frosting:
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup butter
- 3 egg yolks
- 3/4 cup evaporated milk
- 1 tablespoon vanilla extract
- 1 cup chopped pecans
- 1 cup shredded coconut
For the Chocolate Frosting:
- 1/2 cup butter
- 2/3 cup unsweetened cocoa powder
- 3 cups powdered sugar
- 1/3 cup evaporated milk
- 1 teaspoon vanilla extract
Preparation
Heat the oven to 375 degrees. Grease two 9-inch baking pans, and place parchment paper in the bottom of the pans.
For the Cake:
Mix together sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. In a separate bowl mix the eggs, buttermilk, oil, and vanilla and mix well. Combine together the mixtures in the two bowls and mix well. Mix and stir in the boiling water. Bake for 30 minutes then insert a toothpick into the cake. The cake is done if the toothpick comes out clean. Allow it to cool in the pan for 5 minutes then turn the layer(s) onto a wire rack to cool.
For the Coconut Frosting:
In a medium pan, add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk. Heat the mixture on low temperature, and stir until it comes to a boil. Lower the temperature and continue to stir until the mixture begins to thicken. Remove from heat and stir in vanilla, nuts, and coconut. Allow the mixture to cool before spreading it onto the cake.
For the Chocolate Frosting:
Melt the butter in a pan and stir in cocoa powder. Add and mix in powdered sugar, milk, and vanilla. Beat until desired thickness. Small amounts of milk or cocoa powder can be added to thin or thicken the mixture, as necessary.
Cake Assembly
Place the first layer of cake on to a plate. Then spread a thin layer of the chocolate frosting on to the cake followed by a thin layer of the coconut frosting onto the cake. Place the second layer of cake on top and follow the same frosting routine.
