Carrie Mae’s Southern Fried Chicken

Southern fried chicken is one of the most popular dishes for Americans and has made billions of dollars for some of the large and notable franchises.  It has also created enormous opportunities for small business owners throughout the United States. Wing shops can be found in almost every major city with hungry fans waiting in line at some of the more popular chicken establishments.

Here is a simple, chicken recipe from my mom that will surely wet your appetite.

Ingredients:

  • 3 pounds chicken                                                                                                      
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 eggs (beaten)
  • 1 teaspoon paprika
  • 1/2 cup Pet milk
  • 1/2 cup water
  • 2 cups flour
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon granulated garlic
  • 1 quart oil for frying

Preparation

Cut the chicken into eight pieces, and season it with salt and pepper, then set it aside. Mix eggs, milk, and water. Pour mixture over the chicken and let it sit for 5 minutes. In a heavy paper bag, mix flour, paprika, ground thyme, and granulated garlic. Place the chicken in the bag with the flour mixture. Shake until chicken is well coated. Heat oil in a fryer; oil should reach 350 degrees. Place the chicken in hot oil and fry, turning as chicken becomes light brown. The heavy parts, such as breast, thighs, and legs will take 15 to 20 minutes to cook. Wings will take about 10 to 15 minutes. Drain chicken on paper towels. Yield: 4 servings.
