Cecil’s Fried Catfish

Like his brother, William Kirby Seals, Jr., Cecil was also an All-Navy boxing champion.  Eating fried catfish was one of the few things he loved doing beside boxing.

Cecil liked hot green peppers with his meals, so give that a try if you’re brave enough.

 

Ingredients

  • 2 lbs. catfish fillets
  • 1/2 cup cornmeal (Louisiana Fish Fry can be used instead of flour and meal) 
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic salt (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon water
  • 1/ 2 cup peanut oil

 

Preparation

Combine dry ingredients, and pour it into a paper bag. Beat egg, milk, and water until blended. Dip a fillet in the liquid mixture, then place it into the bag and shake until the fish is covered. Fry the fish in peanut oil over medium heat until golden brown. You may need to turn the fish over once or twice until it is done.
