Inez’s: Cream Cheese Pound Cake

 

Ingredients:

  • 3 cups Swann cake flour (sifted)
  • 3 cups sugar
  • 1/4 teaspoon nutmeg
  • 1 dash salt
  • 2 dashes cinnamon
  • 1 8 oz. package cream cheese
  • 3 sticks unsalted butter (softened at room temperature)
  • 6 large eggs
  • 2 tablespoons 7UP
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (fresh)

Preparation:

Preheat oven to 325 degrees. Mix melted butter, cream cheese, and sugar until creamy, add eggs one at a time and continue to beat. Add vanilla, 7UP and lemon juice. Mix flour and spices in a bowl. Add 1 cup of flour to the creamy mixture and continue to beat.

Repeat until all flour is added to the mixture. Pour mixture into a deep baking dish or bundt pan and bake for 1 hour and 30 minutes. Insert a knife into cake; it should come out clean.  (Add your desired frosting to the cake.)
