Donnie’s Favorite Dish: Salmon Croquettes
Ingredients
- 2 cans salmon (de-skinned and de-boned)
- 1 cup Louisiana Fish Fry mix
- 2 finely chopped onions
- 2 eggs
- 1/4 cup hot sauce
- 1 1/2 finely chopped bell peppers (green, red and yellow combination)
- 2 cups cheddar cheese
- 1 package saltine crackers (finely smashed)
- Secret ingredients (Worchester sauce or soy sauce and or jalapeno peppers as desired)
- Peanut oil
Preparation
Mix the salmon and all the ingredients together and form a patty. Drop the patty (one at a time) in a bag of Louisiana Fish Fry and lightly shake. Fry in the oil on low to medium heat until golden brown.
Note: Serve with fried corn, rice, or smothered potatoes.
