Herrin’s Sweet Potato Pie

The popularity of sweet potato pie has increased over the past decade, however it has been a favorite of African Americans for years. No holiday is complete without a few sweet potato pies on the dinner table; so try this desert next holiday season.

INGREDIENTS

  • 2 cups sweet potato (peeled, baked or boiled)
  • ¾ cup granulated sugar
  • ¼ light brown sugar
  • ½ stick butter (melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • ½ cup whole or evaporated milk
  • 1 9-inch unbaked pie crust

Preparation

Preheat the oven to 350°.

Mix the potatoes, sugars, butter, eggs, vanilla, salt and spices. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35-45 minutes or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature.
