Pearl’s Collard Greens
Collard Greens have been around for centuries, and many civilizations have eaten the coarse vegetable along with other vegetables like kale and spinach as insignificant side dishes. However, the African American culture have made collard greens an important dish on the soul food menu.
Ingredients
- 4 large bunches collard greens (cleaned)
- 4 quarts water
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 smoked turkey neck or smoked ham hock
- 1/2 serrano pepper or 1/2 teaspoon red pepper seeds
Preparation
Add water to a large pot and bring to a boil. Add the meat to the boiling water and continue to boil for 30 minutes. Add the greens and other ingredients to the pot. Cover the pot and cook for 2 hours on low to medium heat. Folks like to personalize their greens recipe; you may want to revise the recipe to suit your preference and taste.
