Isaiah’s Fried Rabbit Smothered in Gravy

Fried rabbit smothered in gravy is one of those underrated dishes that if you dare to try it, you’ll surely be surprised of its pleasure to your palate. The taste and texture is very similar to that of fried chicken smothered in gravy.

 

Isaiah’s Fried Rabbit Smothered in Gravy

Ingredients

  • 1 whole rabbit
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 large onion, chopped (green onions, celery, carrots are optional)
  • 1/ 2 cup vegetable oil

Preparation

Cut the rabbit into small pieces and boil for 20 minutes to get rid of the gamey smell and flavor. Remove the rabbit from the water and let cool. Lightly batter the rabbit in the flour, salt, pepper and paprika mixture. Heat the oil in a skillet; then add the rabbit and fry to a light brown.

Remove the rabbit from the skillet and place it in a casserole dish or Dutch oven. Cook the onions in the skillet with the remaining oil. Remove the onions from the skillet and pour in the remaining flour and make enough gravy to cover the fried rabbit. Combine rabbit along with the onions and gravy and bake covered at 325 degrees for 1 hour. Serves 4 (Recipe can be adjusted for only fried rabbit).
