James’ Lamb Chops
Ingredients
- 6 lamb chops
- 4 large garlic cloves (pressed)
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 tablespoon rosemary leaves (crushed)
- 1 tablespoon thyme leaves (crushed)
- 2 tablespoons extra-virgin olive oil
Preparation
Mix garlic, thyme, rosemary, salt, pepper, and 1 tablespoon of olive oil in a large bowl. Add the lamb chops, and coat on both sides. Let the lamb chops marinate for 30 to 60 minutes. Preheat oven at 400 degrees. Add 1 tablespoon of olive oil to a large skillet and heat to medium temperature. Add the lamb chops and brown on both sides. Place the lamb chops in a pan and cook in the oven until done, about 20 to 30 minutes.
Note: The lamb can be cooked covered, or uncovered.
